Pretzels
Pretzels are one of the most profitable items to sell in a stadium because of their extremely low cost and simple preparation. They are also an easy sell because they fit in with many customers' perceptions of what is appropriate to eat at a sporting event. Pretzels are also an attractive option to consider because they are made before hand and only need to be heated to serve. They also lend themselves well to being kept in a merchandiser that includes warming lamps and therefore being always ready to serve. There are two primary options for displaying and warming pretzels at a concession counter. The first, and generally more economical option, is a heated pretzel display case. These tend to be less expensive because they lack the humidity control systems of other units. Most pretzel display cases also hold less product than pretzel warmer units. The second, and more popular option, for pretzel merchandising is the pretzel warmer merchandiser. These are generally larger and more expensive than the display cases and have features that make for a much better product. The most important of these features is that of humidifier systems in the cabinet. Being able to control the humidity within the cabinet allows you to maintain a moist pretzel without it drying out quickly. A better product will generally lead to repeat customers. Some other things to consider when deciding on a pretzel merchandiser is the type of heating power required and the capacity of the unit.
Pizza
Another popular menu item for stadium concessions is pizza and there are specialized concession equipment for this as well. The first decision that must be made is how the pizzas will be cooked. While frozen, pre-made pizzas offer convenience and almost no prep, the quality is much lower than a fresh baked pizza. A countertop pizza oven can cook either frozen or fresh products. Because of the rushes that most stadium concession booths experience, it is usually impractical to attempt to prepare fresh pizzas from scratch during an event. A more workable option would be to prep the fresh pizzas before the event and keep them in cold storage until the event starts. Then you can start cooking them to have fresh ones ready to serve and as the event progresses, you can put more in the ovens as needed to meet customer demand. Once the pizza is made, it is important to keep it warm so that customers do not receive a cold product. Depending on the set up of your operation, you can choose between pizza warmers and self-serve heated merchandisers. Pizza warmers contain trays or racks for holding cooked pizzas and slices and lit signage for attracting customers. Self-serve merchandisers can be used either for what their name indicates or as a method of hot storing and displaying pizzas that are stored in small boxes.
