Soft pancakes (Pissia)

0,5 kg flour
1 tsp salt (scant)
1 tsp dry yeast or starter
water, as much as necessary
1 handful feta cheese, crumbled
olive oil for frying
honey for garnish
Put the flour, salt and yeast in a bowl and add some water. Stir with a wooden spoon to make a thick batter. Add the feta cheese, cover the bowl and leave for an hour. Stir well and then fry the batter in spoonfuls in a small quantity of hot olive oil. Make sure the heat is not too high, so that the pissia are cooked on the inside and remain soft. Serve warm, or at room temperature, with honey.

Beans with wheat kernels (Candoumas)

0,5 kg Borlotti beans
300g bulgar
salt
1 cup finely chopped onions
1 cup olive oil or cow's milk butter
Soak the beans in water overnight. If the wheat is hard, soak it in water along with the beans. In the morning, cook the beans and the wheat until tender, with very little liquid left. Prepare the haratsi in a frying pan: saute the onion lightly in some olive oil or butter until wilted, but not browned, and then pour it while still hot on the beans. (serves 4-6)
